For
something a bit different, try this tasty BBQ chicken kebab recipe
2 lb large shrimp peeled 1 x bell peppers cleaned, seeded and chopped into 1.5" square pieces 2 x egg plant cut 1 1/2" pieces 2 x white or red onions cut into large chunks 1 can pineapple chunks 3 tbls vegetable or olive oil 3 tbls soy sauce 1 tbls honey 1/2 tsp ginger
Preparation
Alternate
shrimp, onion, pepper, squash and pineapple on skewers. Mix pineapple
juice, oil, soy sauce, honey and ginger together and brush onto kebabs.
Grill over a moderate heat for approximately 10 minutes. Turn the
kebabs once and use any remaining sauce to coat the BBQ Chicken kebabs.
Serve with lemon wedges and basmati or pilau rice.
