1/4 cup soy sauce
1/4 cup hoisin sauce
1/4 cup honey
1/4 cup low alcohol beer (stronger beer is optional!)
1/4 teaspoon pepper flakes
1 finely chopped garlic
1 teaspoon finely grated ginger
2 tbls olive oil
2 tbls plain whole-milk yogurt
4 de-boned and skinned chicken breasts
Cooking
Instructions
1. Mix the ingredients, except the chicken breasts, in a glass bowl.
Whisk to combine the mixture for several minutes to allow the sauce to
gel properly. Put ½ cup of the
marinade to one side.
2. Clean the chicken under cold water and pat them dry. Place
the chicken in a glass bowl and pour the remaining mixture over it.
Cover the chicken evenly all over. Cover
the dish and refrigerate for at least 8 hours, preferably leave
overnight for the best flavor.
3. When ready to serve, warm your grill to a moderately high heat,
ensuring that it is not too hot to cook the outside too quickly
otherwise you will toughen the chicken.
4. Put the chicken on the grill, and coat it with the reserved mixture, and cook for 5 or so minutes. Turn on the other
side, coat once again with the reserved marinade and grill for another 4 to 5
minutes until cooked to your liking.
5. Remove the chicken from the grill and allow the breasts to rest for
at least 10 minutes prior to serving your Hoisin BBQ chicken. Slice
thinly and serve.
