2 tbsp fish sauce
3 tbsp sherry (cooking sherry works well too)
2 tbsp brown sugar
1 tbsp black peppercorns, lightly crushed with pestle &
mortar, OR lightly ground with coffee grinder
10 cloves garlic, minced
Chicken dipping sauce
1/2 cup rice vinegar
1/3 cup demerera sugar
4 finely chopped garlic cloves 2 fresh and finely chopped chillies (Tabasco can be used instead)
1 tbsp fish or shrimp sauce
1 tbsp soy sauce
To prepare
Mix all of the sauce ingredients in a glass mixing bowl and combine with the sugar.
Add
chicken parts or thighs to the bowl, and turn a few times to make sure
the chicken is covered with plenty of the sauce mixture.
Cover
and place in the fridge to take on the flavor while you carry on
preparing the sauce. For best results leave the chicken overnight.
To
make the dipping sauce, place all the dipping sauce/glaze ingredients
in a sauce pan. Stir the mixture gently and slowly bring it to a boil.
Now,reduce the heat to medium and let the sauce simmer slowly for
around quarter of an hour, stirring to make sure that the sauce does
not stick to the bottom of the pan.
The sauce will thicken
as the liquid evaporates. You can reduce the sauce as much as you like,
leaving it strong tasting (fairly thick), or quite mild (relatively
loose).
Spray some cooking oil onto your grill and now take the
chicken and place it on the grill, flipping the chicken over from time
to time.
Coat the chicken with the remaining sauce mixture for the first 10 minutes of cooking.
Turn
your oven up to medium-high and move chicken to the upper area of your
oven and coat the chicken with the remaining sauce mixture. Keep an eye
on the chicken and allow it to cook for a further 5 minutes until it is
cooked to your liking. Avoid cooking the chicken for too long as this
will dry out your chicken and toughen it.
Once the chicken has
cooked through, take the chicken breasts from under the grill and place
them on a serving plate and coat one last time with the sauce, allowing
the chicken 5-10 minutes to rest before serving.
You may
optionally add a sprinkle of chopped coriander, or parsley and serve
with a crispy side salad and seasoned boiled potatoes for a healthy and
delicious main course.
